Abstract: The synthesized azo dyes are widely used in food production as a food color because they give stable and light color. However, azo dyes have been reported to be harmful for human health. Therefore, it is necessary to detect their residues in foods by a rapid and accurate method. A review on the recent progress of research for analysis method of azo dyes was presented in this paper, with 36 references cited.

摘要： 偶氮类合成色素是我国批准的食用合成色素中比较常用的品种,虽然其价格、着色、性质等方面较天然色素具有明显的优势,但安全性问题不容小视。因此能否对这些化合物做出快捷、准确的含量测定就显得尤为重要。本文总结了多种偶氮类合成色素的含量检测方法及结果,综述了偶氮类合成色素检测技术的研究进展。
